According to Prepared Foods, the March issue featuring the 2026 New Products Annual highlights key innovation trends in the food industry. Dairy products represent a significant share of new launches, including fermented products, cheese, ice cream, milk, and coffee creamers.
Rising Demand for Fermented Dairy
Fermented dairy remains one of the most dynamic innovation categories. New product launches include high-protein cultured dairy alternatives, probiotic products, and functional beverages.
For example, the company Etelka introduced a European-style creamy cultured dairy product containing probiotic cultures and 18 g of protein per serving.
Functional dairy beverages are also expanding. Danone launched OIKOS FUSION, a product line targeted at consumers using GLP-1 medications for weight management. Each serving contains 23 g of protein, prebiotic fiber, and no added sugar.
