Ukrainian dairy brand Yahotynske has expanded its fermented dairy range with a new 15%-fat sour cream made using thermostat-set technology and packaged in a convenient 300g cup, Milkalliance reports.

Unlike conventional production, thermostat-set fermentation takes place directly inside the cup rather than in a large vat before packaging. Fresh cream and a lactic-culture starter are poured straight into the cups, which are then held in temperature-controlled chambers to set.

Because the finished product isn’t stirred afterward, it keeps its natural, undisturbed glossy set, giving it a thick texture and a mild, creamy tang. It works well both for finishing hot dishes and for sauces or baking. The new sour cream is now available on shelves across Ukraine.
